Lamb Koftas

A flavourful Lamb recipe utilising locally produced Meat. Best served with flat bread and salad.

Ingredients

  • 500g Lamb mince
  • 1tsp ground cumin
  • 2tsp ground coriander
  • 2 large crushed garlic cloves
  • 1tsb chopped mint
  • oil for brushing

Cumin yoghurt

  • Greek yoghurt
  • A pinch of sugar
  • tsp Cumin
  • A light squeeze of lemon juice

Method

Step 1. Mix all the ingredients until well blended, then divide into 8 oval shapes.

Step 2. Pierce the kofta with a skewer, 3 koftas should fit on one skewer. Brush the koftas with a light layer of oil.

Step 3. To cook, heat the pan until you can feel a good heat rising, then cook each kofa for 3-4 minutes on each side. Don’t turn until they are well sealed, to help avoid the meat sticking to the pan.

Step 4. Season according to preferences, and serve the kofta with yoghurt and flatbread.

Cumin yoghurt-

Step 1. Place all the ingredients into a small bowl, Whisk until well incorporated.
